Chicken Fricassee

A comforting dish of tender chicken simmered in a luscious, creamy sauce, perfect for weeknight dinners or special occasions.

  • 1 whole chicken, cut into pieces
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Prepare the chicken: Start by seasoning your chicken pieces generously with salt and pepper.
  2. Brown the chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned chicken skin-side down and sear until golden brown, about 5-7 minutes on each side.
  3. Sauté the veggies: Remove the chicken and add the onion, garlic, carrots, and celery. Sauté for about 5-6 minutes.
  4. Deglaze the pot: Pour in the white wine and simmer for about 3-4 minutes.
  5. Add broth and return chicken: Pour in the chicken broth and return the browned chicken to the pot. Simmer gently.
  6. Simmer it down: Cover and let the chicken simmer for 30-35 minutes over low heat.
  7. Make it creamy: Remove chicken, whisk in the heavy cream, Dijon mustard, and flour. Simmer for additional 5-7 minutes.
  8. Finish with parsley: Season and stir in fresh parsley before serving.
  9. Reintroduce the chicken: Return the chicken to the pot to warm through.

Notes

Serve with fluffy mashed potatoes, creamy polenta, or buttery egg noodles.
