Japanese Corn Rice

A comforting and delicious fusion of jasmine rice and sweet corn, flavored with mirin and soy sauce.

Ingredients

  • 360 mL jasmine rice (2 rice cooker cups)
  • 350 mL water
  • 2 tbsp mirin
  • 2 tbsp low sodium soy sauce
  • 1 pinch salt
  • 1 cup corn (fresh, canned, or frozen)
  • 1 tbsp butter

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rinsed rice, 350 mL water, mirin, soy sauce, and salt in a rice cooker or pot.
  3. Cook it up until all the water is absorbed, about 15-18 minutes.
  4. Add the corn and gently fold it into the rice.
  5. Finish by adding butter and fluffing the rice with a fork.
  6. Serve warm, garnished with fresh herbs, sesame seeds, or green onions if desired.

Notes

For added flavor, consider using broth instead of water or enhancing with fresh herbs.
