Spinach Mushroom Pasta

A cozy comfort food delight featuring earthy mushrooms and vibrant spinach in a rich, creamy sauce.

  • 8 oz Pasta (fettuccine, penne, or spaghetti)
  • 8 oz Mushrooms (baby bella or cremini)
  • 4 cups Fresh Spinach
  • 4 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, grated
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente.
  2. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add onions and sauté for 3-5 minutes until translucent. Add garlic and sauté for an additional 1-2 minutes.
  3. Add the Mushrooms: Stir in the mushrooms and cook until golden brown (5-7 minutes).
  4. Incorporate the Spinach: Toss in spinach and stir until wilted (2-3 minutes).
  5. Create the Sauce: Pour in heavy cream and stir. Let it simmer for about 3 minutes until slightly thickened. Season with salt, pepper, and half of the Parmesan.
  6. Mix Pasta and Sauce: Add drained pasta, tossing to combine. If too thick, add reserved pasta water until desired consistency.
  7. Plate and Serve: Serve immediately, garnished with remaining Parmesan and black pepper.

Notes

Feel free to add other vegetables or protein as desired. Great for customization!
