Turkey Spinach Quesadillas

Delicious Turkey Spinach Quesadillas that are perfect for a quick meal or a gathering with friends.

  • 2 cups cooked turkey, chopped
  • 2 cups fresh or frozen spinach
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 4 large flour tortillas
  • Olive oil, for cooking

Instructions

  1. Prep your ingredients: Start by chopping the turkey into small bite-sized pieces. If you’re using fresh spinach, give it a rough chop; if using frozen, make sure it’s thawed and well-drained. Grate your cheese if you’re not using pre-shredded.
  2. Heat the skillet: Place a non-stick skillet over medium heat and add a drizzle of olive oil to it. Let it warm up.
  3. Sauté the spinach: Toss the spinach into the hot skillet. If you have garlic or onion on hand, adding those in at this stage will make your kitchen smell divine. Sauté for about 2-3 minutes until the spinach is wilted.
  4. Combine the turkey and spinach: Stir in your chopped turkey to the skillet and cook for an additional 2-3 minutes.
  5. Assemble the quesadilla: Remove the turkey and spinach mixture from the skillet and transfer it to a bowl. In the same skillet, place a tortilla and sprinkle a generous handful of cheese over one half. Top with the turkey-spinach mix and another sprinkle of cheese, then fold the tortilla over.
  6. Cook until golden: Cook the quesadilla for 3-4 minutes on one side until it’s golden brown, then carefully flip it over and cook for another 2-3 minutes.
  7. Slice and serve: Once cooked to perfection, remove the quesadilla from the skillet and let it sit for a minute before slicing it into wedges.

Notes

Feel free to experiment with different fillings and spices. Perfect served with salsa, sour cream, or guacamole!
