Chicken Corn Chowder

A creamy and comforting chicken corn chowder, blending chicken, potatoes, and sweet corn with a touch of spices for a heartwarming meal.

  • 1 pound Chicken (breast or thighs)
  • 2 cups Corn (fresh, frozen, or canned)
  • 2 cups Potatoes (Yukon gold or russet)
  • 1 cup Heavy cream
  • 1 Onion
  • 2 cloves Garlic
  • 4 cups Vegetable or chicken broth
  • Seasonings (salt, pepper, thyme, paprika)
  • 2 tablespoons Butter or olive oil

Instructions

  1. Sauté the aromatics: In a large pot, melt butter or heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft. Add minced garlic and cook for an additional minute.
  2. Add the chicken: Toss in diced chicken and season with salt, pepper, thyme, and paprika. Cook until no longer pink, about 6-8 minutes.
  3. Toss in the potatoes and corn: Dice potatoes and add them along with corn to the pot. Stir well to combine.
  4. Pour in the broth: Add broth and bring to a gentle boil. Reduce heat to simmer, cover, and cook for about 20 minutes.
  5. Cream it up: Lower the heat, pour in heavy cream, and stir gently.
  6. Adjust the seasoning to your liking.
  7. Serve immediately and enjoy!
