A heartwarming Chicken Noodle Soup that brings comfort and nostalgia, perfect for chilly evenings.

Ingredients

Scale
  • 1 whole chicken (about 3–4 lbs)
  • 8 cups of chicken broth
  • 3 large carrots, chopped
  • 2 stalks of celery, chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 8 oz egg noodles
  • Salt and pepper to taste
  • Fresh parsley and thyme (optional)

Instructions

  1. Prepare the Chicken: In a large pot, place your whole chicken and cover it with 8 cups of chicken broth. Bring it to a boil over medium-high heat. Reduce to medium-low and simmer for about 45 minutes.
  2. Shred the Chicken: Remove the chicken from the pot and let it cool. Shred the meat into bite-sized pieces.
  3. Sauté the Vegetables: In the same pot, add olive oil if needed, then add the diced onions, chopped celery, and carrots. Sauté for about 5-7 minutes until translucent.
  4. Add Garlic and Herbs: Stir in minced garlic and cook for another minute. If using fresh thyme, add now.
  5. Combine: Reintroduce the shredded chicken and strained broth back into the pot. Stir well and let it simmer for about 10 minutes.
  6. Cook the Noodles: Add egg noodles and cook until tender, about 8-10 minutes.
  7. Finish and Season: Stir in chopped parsley and season with salt and pepper to taste. Let it rest for a couple of minutes.
  8. Serve: Dish up your delicious Chicken Noodle Soup!
