Roasted Beet Goat Cheese Salad

A vibrant salad with earthy roasted beets, creamy goat cheese, mixed greens, and a light vinaigrette.

  • 3 medium-sized Beets
  • 4 oz Goat Cheese
  • 4 cups Mixed Greens
  • ½ cup Walnuts, toasted
  • 3 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Honey or Maple Syrup
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse your beets under cool water to remove any dirt.
  3. Wrap each beet individually in aluminum foil and place on a baking sheet.
  4. Roast for about 45–60 minutes or until fork-tender.
  5. Toast walnuts in a dry skillet over medium heat for 4-5 minutes.
  6. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a bowl.
  7. Wash and dry your mixed greens and place them in a bowl.
  8. Peel and slice the beets after letting them cool for 10 minutes.
  9. Layer the greens, sliced beets, crumbled goat cheese, and toasted walnuts on a serving dish.
  10. Drizzle dressing over the salad just before serving.

Notes

For added freshness, consider adding herbs like dill or parsley.
