Sautéed Vegetables

A vibrant and flavorful sautéed vegetable medley that’s perfect for any meal, easy to make, and packed with nutrition.

  • 2 Tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 cup carrots (sliced)
  • 1 lb asparagus (ends trimmed and cut into 1-inch pieces)
  • 1 zucchini (sliced)
  • 1 red bell pepper (sliced)
  • 8 oz mushrooms (sliced)
  • 3 or 4 green onions (chopped)
  • 1 tsp kosher salt
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • Pinch of red pepper flakes

Instructions

  1. Prep the Veggies: Wash all vegetables, slice the carrots, zucchini, and bell pepper, and chop the green onions.
  2. Heat the Olive Oil: In a skillet, warm olive oil over medium-high heat for about 2 minutes.
  3. Add Garlic First: Toss in minced garlic and sauté for about 30 seconds.
  4. Toss in Carrots: Add sliced carrots and sauté for about 3-4 minutes until tender.
  5. In Go the Asparagus and Zucchini: Add asparagus and zucchini, sauté for another 2-3 minutes.
  6. Mix in Mushrooms and Bell Pepper: Add sliced mushrooms and red bell pepper, cook for an additional 3-4 minutes.
  7. Season It Up: Sprinkle in all seasonings and stir well, letting flavors bloom for 1-2 minutes.
  8. Finish with Green Onions: Stir in chopped green onions and sauté for another minute.
  9. Serve and Enjoy: Remove from heat and plate the sautéed vegetables.
