Southwest Chicken Bowls

A vibrant and flavorful dish combining grilled chicken, cilantro lime rice, black beans, and fresh vegetables, perfect for family meals or meal prep.

  • 2 chicken breasts, boneless and skinless
  • 1 cup cilantro lime rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 2 cups romaine lettuce, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken breasts; pound to an even thickness and season with salt, pepper, cumin, and smoked paprika. Marinate for 15 minutes.
  2. Cook the chicken in a skillet with olive oil over medium-high heat for 5-6 minutes on each side until the internal temperature reaches 165°F (75°C).
  3. Prepare the cilantro lime rice by cooking according to package instructions and stirring in lime juice and chopped cilantro.
  4. Drain and rinse black beans and corn under cool water.
  5. Chop romaine lettuce into bite-sized pieces.
  6. Slice the cooked chicken against the grain into thin strips.
  7. Assemble the bowls starting with cilantro lime rice, then layer with black beans, corn, sliced chicken, and romaine.
  8. Finishing touches include drizzling lime juice and adding spices or cilantro as desired.
