Southwest Chicken Wraps

A celebration of bold flavors and healthy ingredients, these Southwest Chicken Wraps are perfect for lunch, dinner, or a snack.

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, diced
  • 1 jalapeño, diced
  • ½ red onion, sliced
  • 3 garlic cloves, minced
  • 1 tsp olive oil (for sautéing)
  • ¾ cup thawed or fresh corn kernels
  • 1 cup black beans (drained and rinsed)
  • ¼ cup cotija cheese
  • ⅓ cup sour cream
  • 1½ Tbsp honey
  • ½1 Tbsp chipotle peppers in adobo (for crema)
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water (to thin the crema)
  • ¼ tsp salt

Instructions

  1. Prepare the Chicken Marinade: In a mixing bowl, combine the lime juice, chili powder, onion powder, garlic powder, smoked paprika, and salt. Add your chicken breasts and toss to coat. Let it marinate for at least 30 minutes in the fridge.
  2. Cook the Rice: Rinse the rice under cold water. Cook it according to package instructions, adding a pinch of salt to the water.
  3. Sauté the Veggies: Heat a skillet over medium heat and add 1 teaspoon of olive oil. Once hot, add the minced garlic, sliced red onion, red bell pepper, and jalapeño. Sauté for about 4-5 minutes.
  4. Cook the Chicken: Heat the grill or a skillet on medium-high heat, then add the marinated chicken. Cook for about 6-8 minutes on each side until fully cooked.
  5. Assemble the Crema: In a bowl, mix together the sour cream, honey, chipotle peppers, lime juice, chopped cilantro, water, and salt.
  6. Combine the Components: In a large bowl, mix the cooked rice, sautéed vegetables, corn, and black beans.
  7. Wrap It Up!: Layer the rice and veggie mixture, sliced chicken, and cotija cheese in a tortilla. Drizzle on the crema and fold the sides over, then roll tightly.
