Quick Southwest Chicken Wrap

A flavor-packed adventure in a warm tortilla, filled with grilled chicken, fresh veggies, and zesty sauce perfect for quick dinners or gatherings.

  • 0.75 lb Boneless, skinless chicken breasts, diced
  • 0.25 cup Fresh lime juice
  • 3 tbsp Olive oil (divided use)
  • 0.5 tsp Chili powder
  • 0.5 tsp Onion powder
  • 1 tsp Garlic powder
  • 0.5 tsp Smoked paprika
  • 0.25 tsp Salt (plus more to taste)
  • 1 tbsp Finely chopped chipotle pepper in adobo
  • 1 cup Uncooked rice (white or brown)
  • 4 large Flour tortillas (burrito-size)
  • 1 small Red bell pepper, diced
  • 1 Jalapeño, seeded and diced
  • 0.5 Small red onion, thinly sliced
  • 3 cloves Garlic, minced
  • 0.75 cup Corn kernels (fresh or frozen)
  • 1 cup Black beans, drained and rinsed
  • 0.25 cup Crumbled cotija cheese (or similar cheese)
  • 0.33 cup Sour cream (or Greek yogurt)
  • 1.5 tbsp Honey
  • 1 tbsp Chipotle peppers in adobo, finely chopped
  • 1 tbsp Fresh lime juice
  • 3 tbsp Fresh cilantro, chopped
  • 1 tbsp Water (more as needed to thin)
  • 0.25 tsp Salt

Instructions

  1. Prep the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced chicken. Sprinkle with chili powder, onion powder, garlic powder, smoked paprika, and salt. Sauté until the chicken is cooked through and no longer pink, about 6-8 minutes.
  2. Make the rice: In a separate pot, cook your rice according to package instructions.
  3. Prepare the veggies: While the chicken and rice cook, chop your bell pepper, jalapeño, red onion, and mince the garlic.
  4. Combine those flavors: Once the chicken is cooked, stir in the minced garlic, corn, black beans, chopped chipotle pepper in adobo, and cook for a couple more minutes until heated through.
  5. Build the sauce: In a small bowl, whisk together the sour cream (or Greek yogurt), honey, a tablespoon of lime juice, and a splash of water.
  6. Assemble your wraps: Lay each tortilla flat and scoop in a generous amount of rice, then add a portion of the chicken mixture. Drizzle on your creamy sauce, sprinkle with cotija cheese and cilantro, and roll it up tightly.
  7. Grill it (optional): If you want a crispy finish, grill your wrapped beauty seam-side down for 2-3 minutes until golden.

Notes

You can customize this wrap with different proteins or make it vegetarian with extra beans and roasted veggies.
