Spicy Corn Slaw

A vibrant and crunchy side dish celebrating summer flavors with fresh corn, spices, and a creamy dressing.

  • 1 bag (14 oz) cole slaw mix
  • 2 cups corn (fresh or frozen, thawed)
  • 0.25 cup jalapeño (minced, seeds removed)
  • 0.5 cup cilantro (roughly chopped)
  • 3 green onions (chopped)
  • 0.5 cup mayonnaise
  • 2 limes (juice of)
  • 2 tablespoons sugar
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Corn: If you’re using fresh corn, start by shucking it, then boiling for about 3–5 minutes. For frozen corn, just thaw it and pat dry with a paper towel.
  2. Mix the Creamy Base: In a large bowl, combine the mayonnaise (or Greek yogurt), lime juice, sugar, garlic powder, and a generous pinch of salt and pepper. Whisk until smooth.
  3. Toss in the Veggies: Add your cole slaw mix, corn, minced jalapeño, chopped cilantro, and green onions into the bowl. Use a spatula to gently fold the mixture together.
  4. Taste and Adjust: Give your slaw a quick taste and adjust lime juice, salt, or sugar as per preference.
  5. Let it Chill: Cover the bowl with plastic wrap and let it chill in the fridge for at least 30 minutes.
  6. Final Touches: Serve with an extra quick stir and garnish as desired.

Notes

Great make-ahead recipe. Best enjoyed fresh but can be stored in the fridge for up to 2 days.
