Spicy Watermelon Salad with Cilantro and Lime

A refreshing summer salad featuring crisp watermelon, zesty lime, fresh cilantro, and a hint of jalapeño heat.

Ingredients

Scale
  • 1 mini watermelon (or ¼ of a regular watermelon)
  • ¼ cup cilantro, chopped
  • ½ jalapeño, thinly sliced or chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons honey
  • ½ teaspoon kosher salt
  • Pinch of red chili flakes (optional)
  • Flaky sea salt and extra red chili flakes for garnish

Instructions

  1. Prepare your watermelon by slicing it into wedges or bite-sized cubes.
  2. Chop the cilantro finely after rinsing and patting it dry.
  3. Handle the jalapeño by slicing it thinly—consider wearing gloves if you’re sensitive to heat.
  4. Make your dressing by whisking together lime juice, olive oil, honey, kosher salt, and optional red chili flakes in a small bowl.
  5. Combine the watermelon pieces, chopped cilantro, and jalapeño in a large bowl, tossing gently.
  6. Drizzle the dressing over the salad and toss gently to coat.
  7. Serve the salad in a bowl or platter, garnished with flaky sea salt and extra chili flakes.

Notes

Let the salad sit for about 10-15 minutes before serving to enhance flavor. Adjust spice levels according to preference.
