  • 4 cups Broth (beef or vegetable)
  • Salt to taste
  • Pepper to taste
  • 1 tsp Italian seasoning
  • Red pepper flakes (optional)
  • Cumin or smoked paprika (optional)

Instructions

  1. Brown the beef in a large pot over medium heat, adding olive oil as needed until cooked through.
  2. Sauté diced onions and minced garlic in the pot for 3-4 minutes until soft.
  3. Add chopped peppers to the pot and stir for another 5 minutes.
  4. Incorporate the rice into the mixture, stirring for a minute.
  5. Mix in the canned diced tomatoes and broth, bringing to a gentle boil.
  6. Season with salt, pepper, Italian seasoning, and red pepper flakes to taste.
  7. Simmer covered for 20-25 minutes, allowing flavors to meld.
  8. Final touches: If using pre-cooked rice, stir it in during the last 5 minutes of cooking.
