Superfood Berry Salad

A vibrant and nutritious salad packed with mixed greens, juicy berries, and crunchy nuts, topped with a zesty homemade dressing.

Ingredients

  • Mixed Greens (baby spinach, arugula, kale)
  • Juicy Berries (strawberries, blueberries, raspberries)
  • Nuts (almonds or walnuts; or pumpkin/sunflower seeds if nut-free)
  • Lemon Juice (freshly squeezed or bottled)
  • Olive Oil (extra virgin)
  • Fresh Herbs (basil, parsley, or mint)
  • Salt and Pepper

Instructions

  1. Prep your greens by rinsing them under cold water and patting them dry.
  2. Rinse off your berries and slice the larger ones in half.
  3. Preheat your oven to 350°F (175°C) for toasting the nuts.
  4. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl for the dressing.
  5. Combine the greens, berries, and nuts in a large mixing bowl.
  6. Drizzle the dressing over the salad and gently toss to coat.
  7. Transfer the salad to a serving platter and garnish with fresh herbs.

Notes
