Thai Chicken Wraps with Crunchy Asian Slaw

Delicious and vibrant Thai Chicken Wraps filled with shredded chicken, crunchy veggies, and creamy peanut sauce.

  • 2 cups cooked chicken, shredded
  • 1/2 cup creamy peanut sauce
  • 4 large tortillas or wraps
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup shredded cabbage
  • 1/4 cup chopped cilantro
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions

  1. Prep your chicken: If you’re using rotisserie chicken, tear the meat off the bone and shred it into bite-sized pieces.
  2. Make your peanut sauce: If you’re using store-bought, just give it a good stir. If you’re making your own, mix together 1/2 cup of peanut butter, a splash of soy sauce, a dash of sesame oil, a bit of honey or maple syrup, and some water to get the desired consistency.
  3. Prep your veggies: Slice your bell peppers, shred your cabbage and carrots, and chop the cilantro.
  4. Assemble your wraps: Lay out your tortilla or wrap, add a scoop of shredded chicken, drizzle with peanut sauce, and top with veggies.
  5. Wrap it up: Fold the sides of the tortilla over the filling and roll it up tightly.
  6. Slice and serve: Cut in half or keep whole, and serve with extra peanut sauce on the side.

Notes

These wraps can be prepped in advance. Add sauce just before serving to avoid sogginess.
