Vietnamese Summer Rolls with Chicken

Ingredients

  • Rice paper wrappers
  • Cooked chicken breast, sliced
  • Rice noodles
  • Fresh herbs (mint, cilantro, basil)
  • Lettuce leaves (butter or romaine)
  • Julienned vegetables (carrots, cucumbers, bell peppers)
  • Dipping sauce (hoisin or peanut sauce)

Instructions

  1. Prepare the ingredients: Slice chicken, julienne carrots and cucumbers, and tear herbs.
  2. Soak the rice paper: Dip in warm water for 10-15 seconds until softened.
  3. Layer your fillings: Place on a cutting board and add lettuce, noodles, chicken, veggies, and herbs.
  4. Roll it up: Fold sides and roll tightly from the bottom.
  5. Repeat: Continue until all ingredients are used, ensuring surfaces are damp.
  6. Serve the rolls: Cut in half diagonally and arrange on a platter.
  7. Dipping time: Serve with hoisin or peanut sauce and enjoy!
