  • 4 oz goat cheese
  • 4 cups arugula
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets thoroughly to remove any dirt.
  3. Wrap each beet in aluminum foil and place them on a baking sheet.
  4. Roast for about 45-60 minutes until tender.
  5. Remove the beets from the oven and let them cool slightly before peeling the skin off.
  6. Toast the walnuts in a dry skillet over medium heat for about 5-7 minutes.
  7. Assemble the salad by layering arugula, beet wedges, crumbled goat cheese, and toasted walnuts.
  8. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper.
  9. Garnish with fresh herbs and serve.
