Ingredients

  • Tortillas (flour or corn)
  • Shredded Chicken (or tofu/jackfruit for vegetarian)
  • Sour Cream (or Greek yogurt)
  • Green Chilis (fresh or canned)
  • Sweet Corn (canned, frozen, or fresh)
  • Chicken Broth (or vegetable broth)
  • Cumin
  • Garlic Powder
  • Onion Powder
  • Salt & Pepper
  • Cheese (cheddar, Monterey Jack, or pepper jack)
  • Cilantro (fresh)

Instructions

  1. Prep Your Ingredients: Gather and prepare all your ingredients.
  2. Cook the Chili Base: In a pot, add oil, chicken, green chilis, corn, and broth. Bring to a simmer.
  3. Season It Up: Add cumin, garlic powder, onion powder, salt, and pepper. Simmer for 10-15 minutes.
  4. Add the Creaminess: Stir in sour cream until combined. Do not boil.
  5. Warm the Tortillas: Heat tortillas in a skillet or oven.
  6. Assemble the Tacos: Spoon chili onto each tortilla and top with cheese and cilantro.
