Nectarine Frozen Yogurt

A refreshing and creamy frozen yogurt made with ripe nectarines, perfect for summer days.

  • 2 ripe nectarines, pitted and chopped
  • 2 cups Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Start by washing your nectarines. Once they’re clean, pit and chop them into manageable chunks.
  2. Toss the chopped nectarines into your blender or food processor. Add in the Greek yogurt, honey (or maple syrup), lemon juice, and vanilla extract. Blend until it’s all smooth and creamy.
  3. Pour the yogurt mixture into an airtight container and pop it into the freezer for about 2 hours for a slightly soft serve consistency, or longer if you want it firmly frozen.
  4. If you freeze it longer than 2 hours, leave it at room temperature for about 10 minutes before scooping. Use an ice cream scoop dipped in hot water for perfectly rounded scoops.
  5. While your frozen yogurt is chilling, prepare some toppings like fresh mint, toasted nuts, or a drizzle of honey.

Notes

Experiment with various fruits and sweeteners. This recipe can also be made dairy-free by substituting Greek yogurt with non-dairy yogurt.
