Nectarine Salsa

A vibrant and fresh salsa that combines sweet nectarines with spicy chilies and zesty lime, perfect for summer gatherings.

  • 23 nectarines, diced (about 2 cups)
  • 1 tomato, diced (about 1 cup)
  • 1 cup cilantro, minced
  • 1/4 cup shallot, diced (or substitute red onion)
  • 1 bird’s eye chili, finely diced (or substitute with jalapeño)
  • 1 tablespoon lime juice (plus more to taste)
  • 1 teaspoon honey or sugar

Instructions

  1. Prepare the nectarines by slicing and dicing into small pieces.
  2. Dice the tomato into small chunks.
  3. Chop the cilantro finely.
  4. Mince the shallot or red onion.
  5. Add the finely diced chili to the bowl.
  6. Combine the diced nectarines, tomato, cilantro, shallot, and chili in a mixing bowl.
  7. Season with lime juice and honey, stirring gently.
  8. Let the salsa rest for at least 30 minutes to meld the flavors.

Notes

Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2-3 days.
