Banana Cream Cheesecake

A delightful Banana Cream Cheesecake that combines creamy cheesecake with the sweetness of ripe bananas, perfect for any occasion.

  • 2 1/4 cups (302g) vanilla wafer crumbs
  • 10 tbsp (140g) salted butter, melted
  • 3 tbsp (39g) sugar
  • 24 ounces (678g) cream cheese, room temperature
  • 1 cup (207g) sugar
  • 3 tbsp (24g) all-purpose flour
  • 1/4 cup (58g) sour cream, room temperature
  • 4 tsp banana extract
  • 1 cup (240ml) pureed banana (about 2 medium-sized bananas)
  • 3 large eggs, room temperature
  • 1 tsp powdered gelatin
  • 2 tbsp (30ml) milk
  • 2 egg yolks
  • 1/2 cup (120ml) heavy whipping cream
  • 2 tbsp (26g) sugar
  • 3/4 tsp vanilla extract
  • 1/4 tsp banana extract
  • 2/3 cup (160ml) heavy whipping cream, cold
  • 5 tbsp (36g) powdered sugar
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Fresh sliced bananas for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the vanilla wafer crumbs, melted butter, and sugar in a mixing bowl.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then let it cool slightly.
  5. Beat the cream cheese until smooth and creamy in a large mixing bowl.
  6. Add the sugar, flour, and sour cream, mixing until combined.
  7. Mix in the banana extract and pureed bananas.
  8. Add the eggs one at a time, mixing just to incorporate.
  9. Sprinkle the gelatin over the milk and let it sit for a few minutes, then microwave until dissolved.
  10. Pour the cheesecake filling over the cooled crust.
  11. Bake for about 55–60 minutes until the center is set but jiggly.
  12. Turn off the oven and crack the door open to cool slowly.
  13. Chill in the fridge for at least 4 hours or overnight.
  14. Whip the heavy cream for the topping until soft peaks form, then add powdered sugar and vanilla.
  15. Spread the whipped cream over the cheesecake and garnish with fresh banana slices.

Notes

For a healthier option, consider using coconut sugar or a sugar substitute. Store leftovers covered in the fridge for up to one week.
