Ghost Cheesecake Bars

A deliciously spooky dessert perfect for Halloween gatherings or anytime you want to elevate your dessert game.

  • 8 oz full-fat cream cheese
  • 1 cup graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup melted butter
  • 12 tsp black food coloring
  • 1 cup whipped cream
  • 2 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. Crush graham crackers into fine crumbs and mix with melted butter and sugar until combined.
  3. Press the crust mixture into the bottom of the prepared pan and bake for 10 minutes until golden.
  4. Beat the cream cheese until smooth, then add sugar and vanilla, mixing until there are no lumps.
  5. Add eggs one at a time, mixing gently, then incorporate black food coloring to desired shade.
  6. Pour the cheesecake filling over the cooled crust and smooth it out.
  7. Bake for 30-35 minutes until edges are set and center is slightly jiggly.
  8. Cool in the oven with the door slightly open for about an hour, then chill in the fridge for at least 4 hours.
  9. Lift the cheesecake out using parchment paper, slice into bars, and pipe whipped cream ghost faces on top.

Notes

Feel free to make these cheesecake bars ahead of time; they can be kept in the fridge for up to a week.
