Mango Mousse Cake

A light and airy dessert that combines the sweetness of mango with rich mousse layers, perfect for summer celebrations.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups mango puree
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • Juice of 1 lime
  • 1/4 cup cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together flour, baking powder, and salt in a bowl.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time and then stir in vanilla extract.
  5. Combine the dry mixture with the butter mixture, alternating with milk.
  6. Bake the batter in a greased cake pan for 25-30 minutes or until a toothpick comes out clean.
  7. Cool the cake for 10 minutes, then transfer it to a wire rack.
  8. Prepare the mango puree by blending fresh mangoes or using canned puree.
  9. Whip the heavy cream until soft peaks form.
  10. Sweeten the whipped cream with powdered sugar and lime juice.
  11. Combine the mango puree with the whipped cream mixture gently.
  12. Layer the cooled cake and mousse, chilling for at least 4 hours before serving.

Notes

Chill cake overnight for the best flavor combination. Garnish with fresh mango slices and whipped cream.
