Peaches and Cream Crumble Bars

A delightful dessert that combines juicy peaches, rich cream, and a buttery crumble.

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) dark brown sugar
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches/2.5 pounds)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare the baking pan by lining a 9×13 inch baking pan with parchment paper and lightly spraying it.
  3. Make the crumble mixture by combining flour, granulated sugar, and salt with the cold butter, mixing until resembling coarse crumbs.
  4. Set aside about 2 cups of the mixture for topping.
  5. Press the remaining mixture evenly into the bottom of the prepared pan and bake for about 15 minutes.
  6. Prepare the filling by mixing flour, sugar, cinnamon, salt, and chopped peaches together, then folding in the heavy cream and vanilla extract.
  7. Spread the filling over the baked crust evenly.
  8. Top with the reserved crumble mixture.
  9. Bake again for an additional 30–35 minutes until golden brown and bubbly.
  10. Cool for at least 30 minutes before slicing into bars.

Notes

Serve with whipped cream or vanilla ice cream for an indulgent treat.
