  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey

Instructions

  1. Mix the Dry Ingredients: In a large bowl, combine 1 cup of rolled oats, 2 scoops of vanilla protein powder, and 1 tsp of pumpkin pie spice. Use a whisk to blend them together evenly.
  2. Incorporate the Wet Ingredients: In another medium bowl, mix together 1/2 cup of almond butter, 1/3 cup of pumpkin puree, and 1/4 cup of raw honey. Stir until it’s creamy and blended.
  3. Combine Everything Together: Gradually pour the wet mixture into the dry ingredients. Use a spatula to fold the ingredients together until well combined.
  4. Shape the Balls: Use your hands to scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until you’ve shaped all the dough.
  5. Chill and Serve: Place the rolled balls onto a parchment-lined baking tray and pop them in the refrigerator for about 30 minutes.

Notes

These protein balls freeze beautifully and can be stored in an airtight container in the refrigerator for about a week.
