Summer Berry Poke Cake

A delightful moist cake soaked in berry goodness, perfect for summer gatherings with friends and family.

Ingredients

  • 1 box of vanilla cake mix
  • 3 eggs
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 1 cup of mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup of sugar
  • 8 oz of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 cup of heavy whipping cream
  • 1 tsp of vanilla extract
  • Fresh berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish with non-stick spray or softened butter.
  3. Mix the vanilla cake mix, eggs, water, and vegetable oil in a large bowl until smooth.
  4. Bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Poke holes in the cooled cake using a wooden spoon handle.
  6. Prepare the syrup by combining mixed berries and sugar in a saucepan and simmering for 5-7 minutes.
  7. Soak the cake with the warm berry syrup and let it sit for 30 minutes.
  8. Make the frosting by beating cream cheese until smooth, then adding powdered sugar, heavy cream, and vanilla until stiff peaks form.
  9. Frost the cake with the cream cheese mixture.
  10. Garnish with fresh berries and refrigerate for at least an hour before serving.

Notes

Use seasonal fruits for maximum flavor. Can be made a day ahead and stored in the fridge.
