Easy Greek Yogurt Blueberry Muffins

Delicious and fluffy muffins made with Greek yogurt and fresh blueberries, perfect for breakfast or snacks.

  • 1 cup (240 ml) plain full-fat Greek yogurt
  • 1 cup (150 g) fresh blueberries
  • 1 ½ cups (190 g) all-purpose flour
  • 2 tsp baking powder
  • ½ cup (100 g) sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ⅓ cup (80 ml) olive oil or melted butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 12-cup muffin tin with paper liners or cooking spray.
  3. Mix the Greek yogurt, eggs, olive oil, and vanilla extract in a large bowl until creamy.
  4. Combine flour, baking powder, salt, and sugar in another bowl.
  5. Add the dry ingredients to the wet mixture and mix gently until just combined.
  6. Fold in the blueberries carefully.
  7. Fill muffin cups about 2/3 full with batter.
  8. Bake for 18-22 minutes until golden and a toothpick comes out clean.
  9. Cool muffins for 5 minutes in the tin, then transfer to a wire rack.

Notes

For added flavor, try lemon zest or swap half the blueberries for chocolate chips.
