Honey Carrot Pie

A delightful pie combining honey, fresh carrots, and warm spices for a nostalgic dessert experience.

  • 2 cups grated carrots
  • 1 cup honey
  • 1 cup heavy cream
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup crushed Biscoff cookies
  • 1/4 cup melted butter

Instructions

  1. Grate the carrots and squeeze to remove excess moisture.
  2. Prepare the crust by mixing crushed Biscoff cookies with melted butter and pressing it into a pie dish.
  3. Make the filling by whisking together eggs, honey, heavy cream, and vanilla, then fold in grated carrots, cinnamon, and nutmeg.
  4. Pour the filling into the prepared crust and level it out.
  5. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes until edges are golden brown and center is slightly jiggly.
  6. Cool the pie completely at room temperature before slicing and serving.

Notes

This pie tastes even better the next day as the flavors meld together. Garnish with whipped cream or nuts for extra flavor.
