Instructions

  1. Preheat your oven: Set your oven to 350°F (175°C).
  2. Cream the butter and sugars: In a large mixing bowl, combine the softened unsalted butter, brown sugar, and granulated sugar, and beat until light and fluffy.
  3. Add the eggs and vanilla: Mix in the eggs one at a time, then add the vanilla extract until smooth.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry: Slowly add the flour mixture to the wet ingredients, mixing just until combined.
  6. Fold in the mint chocolate chips: Gently incorporate the mint chocolate chips into the dough.
  7. Scoop the dough: Use a cookie scoop to drop rounded tablespoons onto lined baking sheets.
  8. Bake: Bake for 10–12 minutes or until the edges are lightly golden.

Notes

For a chewier texture, use more brown sugar than granulated sugar and slightly underbake the cookies.
