Peach Cake with Brown Sugar Frosting

A delightful dessert that captures the essence of summer with juicy peaches and a rich brown sugar frosting.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peaches, diced (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish with butter or cooking spray.
  3. Combine dry ingredients in a large mixing bowl.
  4. Cream the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well. Stir in vanilla extract.
  6. Mix dry and wet ingredients, alternating with milk.
  7. Fold in the diced peaches.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Prepare the brown sugar frosting by beating butter and brown sugar until fluffy, then add powdered sugar and milk.
  11. Frost the cooled cake and serve.

Notes

For a twist, substitute nectarines for peaches or add nuts. Store leftovers in an airtight container.
