Easy 30-Minute Beef Stir Fry with Noodles

A quick and flavorful beef stir fry with vibrant vegetables and noodles, perfect for weeknight dinners.

  • 1 pound beef sirloin, thinly sliced
  • 8 ounces egg noodles
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, julienned
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • Salt and pepper, to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients and chopping your veggies.
  2. Cook the noodles: Bring a pot of water to boil and cook the egg noodles according to package instructions until al dente, about 4-6 minutes.
  3. Heat the skillet: Heat a large skillet over medium-high heat, add vegetable oil and let it shimmer.
  4. Stir-fry the beef: Add the sliced beef in a single layer, cook for 2-3 minutes, flip and cook for 1-2 minutes, season with salt and pepper, then set aside.
  5. Toss in the veggies: Add more oil if needed, toss in broccoli, carrots, and bell pepper, stir fry for 3-4 minutes; add minced garlic last 30 seconds.
  6. Bring it all together: Return beef to the skillet, add drained noodles, pour in soy sauce and oyster sauce, stir until combined.
  7. Thicken the sauce: Stir in cornstarch mixture, cook for another 1-2 minutes until thickened, adjust seasoning if necessary.
  8. Serve hot: Remove from heat and plate immediately.

Notes

Garnish with green onions and serve with extra soy sauce for those who like it spicy.
