Chicken Wild Rice Bowl

A comforting and hearty Chicken Wild Rice Bowl filled with tender chicken, nutty wild rice, and vibrant vegetables.

  • 2 Boneless, Skinless Chicken Breasts
  • 1 cup Wild Rice
  • 4 cups Vegetable Broth
  • 1 cup Fresh Vegetables (Carrots, Celery, Peas)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Thyme
  • 1 Bay Leaf
  • Salt and Pepper to taste
  • Optional Toppings (toasted almonds, green onions, lemon)

Instructions

  1. Start by rinsing your wild rice under cold water to remove excess starch.
  2. Heat a splash of olive oil in a large pot over medium heat. Sauté the chopped onions and garlic until fragrant.
  3. Add your diced chicken breasts to the pot, seasoning with salt and pepper. Sear until browned, about 4-5 minutes per side.
  4. Throw in the carrots, celery, and any additional veggies. Stir together for an additional 3-4 minutes.
  5. Pour in the rinsed wild rice and stir well. Cover with vegetable broth and add herbs and bay leaf.
  6. Bring to a gentle boil, then reduce heat to low. Cover and let it simmer for about 40-45 minutes.
  7. After the cooking time is up, let it rest covered for about 10 minutes.
  8. Fluff the rice and chicken with a fork, serve in bowls, and top with garnishes.

Notes

For a creamy version, stir in sour cream or Greek yogurt before serving. You can also add spices for varying flavor profiles.
