Turkey Sweet Potato Hash

  • 2 medium Sweet Potatoes, peeled and diced
  • 1 cup Bell Peppers, diced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Spinach (or Kale)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin

Instructions

  1. Prep the Veggies: Begin by peeling and dicing the sweet potatoes into bite-sized cubes.
  2. Cook the Sweet Potatoes: Heat a large skillet over medium heat and drizzle in about 1 tablespoon of olive oil. Add your sweet potato cubes, sprinkle with a pinch of salt, and sauté for about 10 minutes.
  3. Add the Onions and Peppers: When the sweet potatoes are just tender, throw in the diced onions and bell peppers. Sauté for an additional 5 minutes.
  4. Introduce the Ground Turkey: Push the veggies to the sides of the skillet and add another drizzle of olive oil. Add the ground turkey, breaking it up with a spatula. Season and cook for about 5-7 minutes.
  5. Incorporate Garlic and Spinach: Once the turkey is thoroughly cooked, add the minced garlic and spinach. Stir and cook for about 2 more minutes.
  6. Final Touches: Give your hash a taste and adjust the seasoning if necessary.
