Cajun Sausage Pasta

  • 8 oz pasta (penne or farfalle)
  • 1 lb smoked andouille sausage, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Olive oil (for sautéing)
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain, saving a cup of pasta water, and drizzle with olive oil.
  2. Sauté the sausage: In a skillet, heat olive oil over medium heat, add sausage, and brown for about 4-5 minutes.
  3. Add the veggies: Toss in diced onion and bell pepper; cook until soft, about 3-4 minutes. Add minced garlic and sauté for another minute.
  4. Create the sauce: Pour in chicken broth and heavy cream, mix in Cajun seasoning, and let simmer for 5 minutes. Adjust with reserved pasta water if thickened.
  5. Combine: Add cooked pasta and halved cherry tomatoes, tossing to coat in sauce. Warm for another 2-3 minutes and season with salt and pepper.
  6. Garnish: Sprinkle with fresh parsley before serving.
