Caribbean Chicken and Rice

A vibrant and flavorful dish that combines juicy chicken thighs with fluffy rice, creamy coconut milk, and lively spices.

  • 1 lb chicken thighs
  • 2 cups rice
  • 1 can coconut milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup peas
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients: Gather and prep all your ingredients. Chop the onion and bell pepper, mince the garlic, and prepare the chicken thighs.
  2. Sauté the aromatics: Heat 2 tablespoons of olive oil over medium heat. Toss in the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the garlic and bell pepper, cooking for an additional 2 minutes until fragrant.
  4. Brown the chicken: Season the chicken thighs with salt, pepper, thyme, and paprika. Sear for about 5 minutes on each side until golden brown.
  5. Add the rice: Pour the rice into the pot, stirring to coat it in the oil and spices.
  6. Pour in the coconut milk and broth: Bring to a gentle simmer, scraping the bottom of the pot to incorporate all the tasty bits.
  7. Cover and cook: Once bubbling, cover with a lid and let it simmer for about 25 minutes.
  8. Add the peas: After 25 minutes, sprinkle in the peas, stirring gently. Let it simmer for another 5 minutes on low heat.
  9. Serve it up: Turn off the heat and let it sit for 5 minutes before fluffing the rice and serving.
