Chicken Wild Rice Bowl

A hearty Chicken Wild Rice Bowl filled with protein, vibrant veggies, and tons of flavor, perfect for cozy dinners or impressing friends.

  • 2 boneless, skinless chicken breasts
  • 1 cup wild rice
  • 3 cups water
  • Salt
  • Black pepper
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 2 cups fresh spinach
  • Garlic powder
  • White wine (optional, for deglazing)

Instructions

  1. Prepare the Wild Rice: Rinse 1 cup of wild rice under cold water, then add it to a pot with 3 cups of water and a pinch of salt. Bring to a boil, cover, and simmer for about 45 minutes or until tender.
  2. Cook the Chicken: Season 2 chicken breasts with salt, pepper, and garlic powder. Heat 2 tablespoons olive oil in a skillet over medium-high heat, add the chicken, and cook for about 5–6 minutes on each side until cooked through.
  3. Sauté the Mushrooms: In the same skillet, add more olive oil if necessary and toss in 8 ounces of sliced cremini mushrooms. Sauté for about 5 minutes until golden brown.
  4. Add the Spinach: Stir in 2 cups of fresh spinach to the skillet and cook until wilted, about 2 minutes.
  5. Assemble Your Bowl: Fluff the wild rice and divide it into bowls. Top with sliced chicken, sautéed mushrooms, and wilted spinach. Drizzle with pan sauce or balsamic reduction.

Notes

Feel free to substitute chicken with turkey or chickpeas. For a twist, add nuts, spicy elements, or creamy toppings.
