Chinese Pepper Steak

A colorful stir-fry featuring juicy beef, crunchy bell peppers, and a savory sauce that will become a weekly favorite.

  • 12 ounces flank steak
  • 1 to teaspoons baking soda
  • Salt and pepper (to taste)
  • ½ cup low-sodium chicken stock
  • 1 tablespoon cornstarch
  • 1½ tablespoons oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • ½ teaspoon brown sugar
  • ½ teaspoon sesame oil
  • ⅛ teaspoon white pepper (to taste)
  • 1 green bell pepper (cut into thin strips)
  • ½ red bell pepper (cut into thin strips)
  • 1 medium onion (cut into thin strips)
  • 2 tablespoons neutral oil
  • ½ teaspoon ginger (minced)
  • 2 cloves garlic (minced)

Instructions

  1. Prep your ingredients by slicing the beef thinly and tossing it with baking soda for about 15 minutes.
  2. Rinse the steak under cold water and pat dry with paper towels.
  3. Make the sauce by whisking together the chicken stock, cornstarch, oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, brown sugar, and sesame oil.
  4. Heat the oil in a large skillet or wok over high heat until shimmering.
  5. Cook the beef in a single layer, searing each piece undisturbed for 1-2 minutes until browned.
  6. Sauté the onion, green bell pepper, and red bell pepper in the same skillet for about 3-4 minutes.
  7. Add minced garlic and ginger, cooking for another minute until fragrant.
  8. Bring the beef back into the skillet, pour in the sauce, and stir everything together, cooking for another 1-2 minutes until the sauce thickens.
  9. Final touches: taste for seasoning and adjust as needed before serving hot.

Notes

Serve hot over steamed rice or crispy noodles. Add fresh scallions or sesame seeds for garnish.
