Crispy Greek Lemon Potatoes

Deliciously crispy oven-roasted Greek potatoes infused with lemon and herbs, perfect as a side dish for any meal.

  • 2.53 lbs Russet or Yukon Gold potatoes, scrubbed
  • ½ cup fresh lemon juice
  • ½ cup extra-virgin olive oil
  • 46 cloves garlic, finely minced or pressed
  • 2 tbsp dried oregano
  • 1 tsp salt (adjust to taste)
  • ½ tsp freshly ground black pepper (or to taste)
  • ½ cup vegetable or chicken broth (or water)
  • Fresh parsley or oregano, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash the potatoes thoroughly and cut them into 1-inch cubes.
  2. Combine fresh lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper in a large bowl.
  3. Toss the potato chunks in the marinade and let them sit for 10-15 minutes.
  4. Arrange the marinated potatoes in a single layer in a baking dish. Add broth.
  5. Roast in the oven for 30-35 minutes, shaking halfway through for even cooking.
  6. Switch to broil for the last 2-3 minutes for a crispy finish.
  7. Garnish with fresh parsley or oregano before serving.

Notes

For a twist, add smoked paprika for heat, or sprinkle with feta cheese in the last few minutes of cooking.
