Easy French Onion Soup

A comforting classic that features caramelized onions, rich beef broth, and melted cheese, all served on toasted baguette.

  • 6 cups thinly sliced onions
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 sprigs fresh thyme
  • 1 bay leaf
  • ½ cup dry white wine
  • 4 cups high-quality beef broth
  • 4 slices toasted baguette
  • 1 ½ cups grated Gruyere cheese
  • Salt and pepper to taste

Instructions

  1. Sauté the onions by melting the butter and olive oil in a large pot over medium heat, add the onions and salt.
  2. Caramelize the onions for about 30-40 minutes, stirring periodically until golden-brown.
  3. Add the thyme and bay leaf, then stir in the white wine and allow it to reduce for 5 minutes.
  4. Pour in the beef broth and let it simmer for 20-30 minutes, adjusting seasoning as needed.
  5. Toast the baguette slices until golden and crispy during the soup’s simmering time.
  6. Preheat the broiler and ladle the soup into oven-safe bowls, topping with the baguette and grated cheese.
  7. Broil for 2-3 minutes until the cheese is bubbly and golden, watching closely to prevent burning.

Notes

For a vegetarian version, substitute beef broth with vegetable broth. You can also use different cheeses for varied flavors.
