  • 2 chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your veggies by slicing zucchini and chopping bell pepper and onion. Toss with minced garlic.
  3. Dice the chicken breasts and season with salt, pepper, oregano, and basil.
  4. Combine the seasoned chicken with the veggie medley and halved cherry tomatoes, then drizzle with olive oil and toss.
  5. Arrange the mixture in a large baking dish, spreading it out evenly.
  6. Top with crumbled feta cheese.
  7. Bake for about 30-35 minutes until chicken is cooked and veggies soften.
  8. Broil for 2-3 minutes for extra crispiness.
  9. Serve and savor after letting it rest for a few minutes.
