Mediterranean Chicken Zucchini Bake

A delicious Mediterranean Chicken Zucchini Bake that combines juicy chicken, fresh vegetables, and warm spices for a wholesome meal.

  • 2 Chicken Breasts, boneless and skinless
  • 2 Medium Zucchini, sliced
  • 1 Cup Cherry Tomatoes, halved
  • 1 Onion, chopped
  • 2 Cloves Garlic, minced
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Olive Oil
  • Salt and Pepper to taste
  • Feta Cheese for topping (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prep the zucchini, cherry tomatoes, onion, and garlic.
  3. Sauté the onions in olive oil for 3-4 minutes, then add garlic for 1-2 minutes.
  4. Layer zucchini, onion mixture, chicken, salt, pepper, oregano, and cherry tomatoes in a baking dish.
  5. Drizzle with olive oil, cover with foil, and bake for 25 minutes.
  6. Uncover, add feta, and bake uncovered for 10-15 minutes until cheese is golden.
  7. Let the dish rest for 5 minutes before serving.

Notes

This dish can be made ahead of time and stored in the fridge before baking. Freezes well for up to three months.
