  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup chicken broth or water
  • 1 cup mixed vegetables (like bell peppers, zucchini, and cherry tomatoes)
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Prep your chicken by dicing into bite-sized pieces and seasoning with salt, pepper, cumin, paprika, and cinnamon.
  2. Sear the chicken in olive oil over medium-high heat for 5-7 minutes until golden brown.
  3. Add the mixed vegetables to the skillet and cook for another 3-4 minutes.
  4. Cook the couscous by bringing broth or water to a boil, then stirring in couscous and letting it sit for 5 minutes.
  5. Assemble the bowls by placing couscous at the base, topped with the chicken and veggies, and garnish with parsley and lemon wedges.

Notes

For a vegetarian option, swap chicken for chickpeas or lentils. Feel free to add toasted nuts for crunch or different herbs for freshness.
