Tasty Orzo with Chicken and Asparagus

A flavorful one-pan dish featuring tender chicken, vibrant asparagus, and creamy orzo, brightened with a splash of lemon juice.

  • 1 ½ tbsp olive oil
  • 1 lb chicken breast (cut into 1-inch bite-sized pieces)
  • 1 lb asparagus (tough ends trimmed and cut into 2-inch pieces)
  • 1 lemon (juiced, plus 1 tsp zest for finishing)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¾ cup leeks (thinly sliced using only the white and light green parts)
  • 5 garlic cloves, minced
  • 1 ½ tbsp extra virgin olive oil
  • ¼ tsp crushed red pepper flakes
  • 1 ½ cups orzo
  • 3 cups chicken broth (low sodium)
  • ¾ cup water
  • 5.2 oz Boursin Garlic & Fine Herbs cheese
  • 2 tbsp fresh lemon juice
  • ⅓ cup fresh parsley, chopped

Instructions

  1. Sauté the chicken: Heat 1 ½ tablespoons of olive oil in a large skillet over medium-high heat, add the chicken, season with salt and pepper, and sauté until golden brown (about 5-7 minutes).
  2. Sauté the aromatics: Add sliced leeks and minced garlic, and sauté for about 3 minutes until fragrant and softened.
  3. Add the asparagus: Toss in the asparagus and crushed red pepper flakes, cooking for another 3-4 minutes.
  4. Stir in the orzo: Add the orzo, stirring to coat it with the other ingredients.
  5. Add broth and water: Pour in the chicken broth and water, bring to a gentle simmer, cover, and let simmer for about 10-12 minutes.
  6. Stir in Boursin cheese: Once the orzo is cooked, remove from heat and stir in the Boursin cheese.
  7. Finish with lemon and parsley: Add fresh lemon juice and zest, and chopped parsley; stir to combine.
  8. Taste and adjust: Before serving, taste and adjust seasoning as needed.

Feel free to experiment with the recipe by adding different vegetables or using different proteins like shrimp or sausage.
