Scale
  • 1.6 pounds ground beef
  • 4 tbsp breadcrumbs
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tsp dried onion
  • 1 egg
  • 1 tsp Dijon mustard
  • 1 tbsp olive oil (for cooking)
  • 1 tbsp unsalted butter (for cooking)
  • 1 yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tsp dried thyme
  • ¼ cup dry white wine (or beef or chicken broth)
  • 1 ¼ cups heavy cream
  • ½ cup grated Parmesan
  • 1 tsp horseradish (more to taste)
  • Chopped chives (for serving)

Instructions

  1. Mix the Patty Ingredients: In a large bowl, combine the ground beef, breadcrumbs, salt, pepper, dried onion, egg, and Dijon mustard. Use your hands to mix until everything is just combined.
  2. Shape the Patties: Divide the mixture into 4–6 portions, forming oval-shaped patties about ¾ inch thick.
  3. Sear the Patties: Heat olive oil and butter in a skillet over medium-high heat and add your patties. Cook for about 4–5 minutes on each side.
  4. Cook the Aroma Ingredients: Remove patties and sauté diced onion in the same skillet for about 3-4 minutes, then add minced garlic.
  5. Deglaze with Wine: Pour in dry white wine (or broth) and scrape up brown bits from the pan.
  6. Create the Creamy Sauce: Add heavy cream, thyme, salt, and pepper to the skillet, simmer for about 5 minutes. Stir in Parmesan and horseradish.
  7. Return Patties to the Sauce: Place the patties back into the skillet and spoon sauce over them. Simmer for another 3 minutes.
  8. Garnish and Serve: Sprinkle chopped chives over the top and enjoy!
