Taco Lasagna

A flavorful twist on traditional lasagna that combines the zest of taco night with comforting layers of cheese and tortillas.

Ingredients

  • 1 lb (450g) ground beef
  • 1 packet (1 oz / 28 g) taco seasoning mix
  • 2/3 cup (160 ml) water
  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) corn kernels, drained
  • 1 can (10 oz / 283 g) diced tomatoes with green chilies, drained
  • 2 cups (200 g) shredded cheddar cheese
  • 2 cups (200 g) shredded Monterey Jack cheese
  • 810 medium flour tortillas
  • 1/2 cup (120 g) sour cream
  • 2 green onions, sliced (optional garnish)
  • Fresh cilantro, chopped (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the beef in a large skillet over medium heat for about 5-7 minutes. Drain excess fat.
  3. Add the taco seasoning and water, stirring well and simmer for 2-3 minutes.
  4. Mix in the black beans, corn, and diced tomatoes, simmering for another 5 minutes.
  5. Assemble in a 9×13-inch baking dish with layers of beef mixture, tortillas, and cheese.
  6. Add the sour cream mixed with a bit of water over the top layer of cheese.
  7. Bake covered with foil for 20 minutes, then uncover and bake for another 10-15 minutes until cheese is bubbly.
  8. Cool for about 10 minutes before slicing.

Notes

Great for meal prep! Can be assembled ahead of time or frozen for future meals.
