  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the sweet potatoes by peeling and cubing them into bite-sized pieces.
  3. Toss the sweet potatoes with olive oil and seasonings on a baking sheet.
  4. Roast the sweet potatoes for about 25-30 minutes, flipping halfway through.
  5. Cook the ground turkey in a skillet over medium heat, seasoning until no longer pink.
  6. Combine the roasted sweet potatoes with the ground turkey in the skillet.
  7. Serve the mixture over a scoop of quinoa or rice, if desired, and garnish with green onions.
