Hearty Beef Barley Soup

A comforting bowl of Beef Barley Soup filled with tender beef, nutty barley, and vibrant veggies simmered in rich broth.

Ingredients

  • 1 lb chuck roast or brisket, cut into chunks
  • 1 cup pearled barley
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by dicing the onions, carrots, and celery into small, even pieces.
  2. Brown the beef in a large pot over medium-high heat, seasoned with salt and pepper, until evenly browned.
  3. Sauté the onion, carrots, and celery in the same pot for about 5 minutes, then add the garlic and cook for an additional minute.
  4. Deglaze the pot with a splash of beef broth to scrape up any bits from the bottom.
  5. Add the beef back, along with barley, thyme, bay leaf, and remaining beef broth. Stir and bring to a gentle boil.
  6. Simmer on low for about 1.5 to 2 hours, stirring occasionally until beef is tender.
  7. Adjust seasoning with salt and pepper as needed before serving.

Notes

Serve in deep bowls and garnish with fresh parsley. Pair with warm, crusty bread.
