One Pot Beef Bourguignon

A classic One Pot Beef Bourguignon that brings warmth and comfort into your kitchen, perfect for gatherings and cozy dinners.

  • 2 pounds beef chuck
  • 1 pound mushrooms (sliced)
  • 2 carrots (sliced)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Trim the beef chuck into 1-inch cubes, evenly cut the carrots, and chop the onion.
  2. Brown the Beef: Heat the olive oil in a large pot over medium-high heat. Add the beef in batches and sear until browned, about 8-10 minutes.
  3. Sauté the Aromatics: Remove the beef and sauté onions and garlic in the same pot until soft, about 3-4 minutes.
  4. Add the Carrots and Mushrooms: Stir in carrots and mushrooms, sauté for another 5 minutes.
  5. Incorporate the Liquid: Add tomato paste, then red wine, scraping the pot to lift browned bits.
  6. Return the Beef and Add Broth: Add beef back to the pot along with broth, thyme, and bay leaf.
  7. Let It Simmer: Bring to a boil, reduce to low, cover, and simmer for at least 2-3 hours.
  8. Final Adjustments: About 30 minutes before serving, taste and adjust seasoning.

Notes

Serve garnished with fresh parsley and pair with crusty bread or creamy mashed potatoes.
