One Pot Beef Taco Pasta

A delicious one-pot pasta dish that combines all the flavors of your favorite taco night into a comforting meal.

  • 8 oz pasta (penne or rotini)
  • 1 lb ground beef
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Sauté the Beef: Begin by heating a large pot over medium heat. Add your ground beef and cook it until it’s nicely browned, about 5-7 minutes. Season with salt and pepper.
  2. Add the Aromatics: Once your beef is browned, add the taco seasoning and stir for an extra minute until fragrant.
  3. Mix in the Tomatoes: Toss in the diced tomatoes and tomato sauce, scraping up any browned bits from the bottom of the pot.
  4. Pour in the Broth: Pour in 1 cup of beef broth and bring it to a gentle simmer.
  5. Add the Pasta: Add the pasta to the pot, ensuring all pieces are well-coated. Cover and cook according to package directions, stirring occasionally, until al dente.
  6. Stir in the Cheese and Corn: Remove from heat and stir in shredded cheese and optional corn. Cover for a few minutes to let the cheese melt.
  7. Taste and Adjust: Before serving, taste and adjust seasoning as needed.

Notes

Serve with chopped cilantro on top along with tortilla chips or guacamole for a full taco experience.
